RGB Scart (fully wired 21 pin scart cable) is the way to go on most plasmas. I use this scart lead with excellent PQ:
    http://www.audiovisualonline.co.uk/...d-pgv7500-oxypure-rgb-only-scart/display.html

You could try fine tune this by introducing a JS Convertor which would then allow Scart to VGA or Component but it depends on the brand of plasma you have got and I dont think it improves the PQ that much to warrant spending £100+

In terms of S-video, you would get sound by using the phono outputs into either phono inputs on the plasma or into a 3.5mm jack input but interms of picture I think a fully wired scart gives you better picture.

I would go with JS Convertor which would then allow Scart to VGA.

Best is probably via SDI into a scaler - but your talking lots of wonga (SDI mod of Sky+ box, then price of scaler ontop)
