What Exactly Does Audyssey Do?

I've recently spent a lot of time getting to know my amp (Denon AVR 2311) and it's menus / setup etc but I'm trying to figure out exactly what Audyssey does.

I upgraded my front main speakers but the centre had also seem vey "dull" and my hearing's not great so I changed that and all of a sudden the dialogue was much "brighter" and so much clearer / easier to hear.

I got round to running Audyssey / speaker set up yesterday and now my new centre sounds just like my old one, flat and much harder to hear dialogue.

I thought the auto set up would mainly measure distances and set channel levels, I didn't realise it had such and impact on the tone as well, is there something I can do to undo this so the centre's brighter again?

Makes me wonder if I actually needed a new centre at all.
I purchased a Marantz AV unit to slot in with my main Audio system last February.
I tried the Audyssey set up for the speakers, but found the resulting settings totally disappointing, just sounded wrong, particularly the quiet centre speaker.
Then did it manually, by ear and hey presto, one extremely happy audio bunny!
It took a bit of time but was worth the trouble.
