No that is on a list to do later. Naan first though.

Got a bargain piece of trout date was yesterday lol sometimes meals surpass their expectations this was one of those, simple cooking but somehow was the perfect meal for the moment!
sauteed in olive oil rested then made a garlic lemon caper and parsley butter, turmeric veg rice, salad with roasted vine tomatoes,, yum

fresh pasta cannelloni.

Made the pasta dough yesterday which saved time today as did making long tubes.

Sauces, classic white sauce with a little nutmeg and tomato ragu. Filling was quorn mince, sun dried tomorrow and mozzarella in a little tomato sauce.

with an 80% poolish garlic herb oil focaccia.

Brined salmon on udon noodles in a soy, honey, onion and miso wet with the removed skins added as crackling.

I made a stuffed-crust pizza for the Missus, and I think I have them down pat now. She had pepperoni, salami and onions, all topped off with both torn mozzarella and gruyere.

She remarked that it was my best pizza yet, and I've run up a fair few in my time.

What curry recipe do you use please?
Make it up. parents are Indian, so just stuff I have learnt over time. not sure of quantities I just taste and do everything by eye.

Roughly:

500g diced mutton
Salt
Garam masala (to season the meat only)
Turmeric
Ginger
Cumin powder
Coriander powder
Garlic
Red onion
Smoked paprika
Chilli powder
Fresh chilli (usually birds eye)
Fresh coriander leaves
Tomato (tinned)
Bay leafs (if I can be arsed to go to the bottom of the garden to grab some)

method:
Season meat with garam masala and salt, seal in a saucepan with a little rapeseed oil. Remove the meat, add the onion. Sweat the onion, sweat it some more and some more after that. Add fresh garlic. After a few mins add the various spices and warm them through. Then add the meat back and cook some more until the liquid produced from the mutton starts to thicken. Then add the tomato (crushed) and simmer until it all thickens up. I tend to leave a lid on for the first 20mins or so. Just before serving chop some coriander in and use a little to garnish.

that’s roughly how I do it.
Similar to what I use. I substitute tinned tomatoes for rather cream of tomato soup or passata.
Anyhow. Christmas Dinner part 2 (aka Sunday Dinner). Lamb cooked rare in the middle so use the leftovers for curry
Roast potatoes are part boiled, roasted in some oil and then thrown in the air fryer for extra crispness

Little tip- jacket potato with Brie and cranberry sauce. Bit of black pepper on the Brie before the cranberry sauce. Delish
