hi I have a cigarette socket in the back of my van and I have a 600 watt inverter. Can I power a 600 watt microwave using this with the engine running?

NO!

600 Watt invertor will need 50-60 Amps on full load

Ciggarett lighter sockets/wiring/fuse are rated to about 10 Amps max. You would need a direct battery connection for this using 10mm cables at least
