what exactly should i do , or be aiming for ???

do i turn the contrast all the way up and then turn down the brightness and colour like on a crt ???

A general rule of thumb is that contrast should be dropped to around 60% and brightness should be around 50% but these are very basic settings. You really should use a calibration disc like DVE or even the THX optimiser found on certain DVD's (such as the Star Wars ones)
