Conect your DVD recorder to the second scart cable of the V+ Box (the lower one at the back). Then use the copy to DVD/VCR feature on the V+ box and make sure your DVD recorder is recording form the right input that the scart is in.

The V+ Box can record two different programs, whilst you watch a third and copy to vcr all at the same time. I do this regularly. Great bit of kit...

What sort of connection can you use to connect to your DVD/VCR? I assume SCART... is it composite or RGB? Or is this selectable?

If you copy from the VCR scart its composite.

If you copy from the TV scart its RGB.

The latter is fiddly because you cannot output from the TV scart and the high definition connection at the same time.
