If my hdmi input goes into the receiver before it goes to the tv will this mean a latency hit on my TV.

No , video and audio will travel along the same path, with HDMI2.0 the speed is about 18Gbps. Should not be an issue

Good Video. I just got a SONY STR-DN860.
The receivers are now a lot more complex with facilities for SCREEN MIRRORING, CHROME CASTing and AIRPLAY. With support for HDCP2.2 and HDMI2.0 you need to choose carefully to accomodate all the new gear (4K TVs and monitors).
