A six-track 70mm print exists, so you'd think there'd be elements for it...

I don't believe there are any legal methods for downloading this movie, and please don't start asking where else it can be downloaded. :)

    Hi

The Deer Hunter has been released a while now with a DD 5.1 sound Track. The Version that you are looking for is released by Optimum Publishing in the UK and is available in 1 or 2 disc version.

I had a look for a link and found these ones on Amazon.

    Single Disc

    http://www.amazon.co.uk/Deer-Hunter...4-9170350?ie=UTF8&s=dvd&qid=1190277435&sr=1-1

    Double Disc

    http://www.amazon.co.uk/Deer-Hunter...4-9170350?ie=UTF8&s=dvd&qid=1190277695&sr=1-2

Amazon has the soundtrack listed as Dolby Digital, but fails to mention the 5.1, but one of these releases is what you're looking for.

Also, if you're looking for information about some DVD Spec's. this site is always useful.
