My father bought a Surround Sound system from some Supermarket expecting to hook it upto his Sky box & get surround sound. His Sky box only has an optical output & the Amp for the speaker system has the colour coded inputs, is their something that will convert the digital signal to the sperate channels needed? or will he have to fork out for a better system? I've checked all his other equipment & they're all the same

No good I'm afraid, you'll need an actual Dolby Digital decoder built into the surround system, unfortunately you won't find anything to fit in between to make it work (that I've ever heard about anyway).
Just look for a surround system that has Optical in, that's your safest bet...
