Sky box, PS3, LG 42LA740v and Sonos Playbar

I'm somewhat bewildered by the sheer number of sound output options on the PS3 and understanding what the LG tv passes through optically to the Sonos Playbar.

Can anyone give me a view on what the sound settings should be - and same question applies to the Sky Box I suspect.
