So ... both AV Receiver and 5.1 Speaker System? Correct?

Though only as a starting point, I would give about 1/4 to 1/3 to the AVR, and about 3/4 to 2/3 to the speakers.
So 1/3 + 2/3 =
£1333 = AV Receiver
£2666 = Set of Speakers
And 1/4 + 3/4 =
£1000 = AV Receiver
£3000= Set of Speaker
I think you can do very well for that amount of money. Keep in mind the above is only a starting point, you are free to adjust it to suit your personal taste and the equipment you find.
In that small room, I would suggest bookshelf speakers. Though it goes against my nature, if you want a more compact Speaker System, small Satellite speakers would probably be fine.

You can get the Monitor Audio Silver Subwoofer, but they tend to be expensive. The best High-Value Subs come from BK Electronics, simply pick one that best fits your room.

In that small space I would recommend a 10" Subwoofer.

In all honesty, I think the absolute best would be the
KEF LS50, these are extremely highly rated speakers.
And if placing bookshelf at the Sides is a problem, then you could substitute a pair of
LS50 bookshelf for a pair of very compact
KEF 'eggs.

I think these could be easily wall mounted.
It is more important to have a perfect match across the Front
(Left/Center/Right) to get consistent sound. However, less so the Surround speaker at the Side/Rear. You don't want them grossly different, but most people are forced by circumstances to compromise in this area.
In your case, you room might be a bit small for the placement of Bookshelf speakers at the Side or Rear. Though I suspect it can still be done. So, an alternative Surround speaker would be workable.
Considering your budget, the
130mm (5.25") Kef LS50 fit your budget, and really are stunning highly rated speakers.
As to a Subwoofer, you are free to buy any brand or pay any price, but the
BK Electronics really are very high-value Subs, many people in this forum use them.
As to AV Receivers, with a fair budget, you have many to choose from. I think topping my list would be
Marantz. Always very highly rate for both movie sand music playback.

KEF LS50, and with Surround Speaker appropriate to your circumstances, and with the

I think if you check out reviews and discussions on any of these products, you will find that they are highly regarded.
Likely you can come in under budget and have money left over to pay for wire, cable, and perhaps a BluRay Player.

Here is a thread where someone needed speakers with a Wide Sound Stage and he had very limited space. I recommend
KEF LS50 and provided a couple of videos related to those speakers which you might find helpful. Notice others who commented on the LS50 were very positive.
