What are people's opinions on using different cable on the rear speakers, to that of the fronts/center?

I certainly do. I use the same cable for the front three but a cheaper thinner cable that goes under the carpets for the rears.

Could you point me the right direction of some decent flat cable?

There are a few flat cables listed here including the Ixos XHS233 at £2 per metre which is flat with a self adhesive strip on one side. This is the cable that I use for my rears (previously known as Ixos 607)
