removeing old user?

hi ive just inherited my wifes HTC Desire & what to remove her from the phone so i can put on my details & gmail Ect ect but dont want to loose everything, ive unlocked it useing giff gaff's tutorail & am not sure if i revert to factory settings it might put the sim lock back on? also is there a way i can remove the 3 branding so i can remove some of the preinstalled apps & settings?
god i dont want much do i lol

Settings > account > remove account

To remove per installed apps you must root the phone

Reset phone and log back in with your gmail account is the clean & legal way to transfer ownership.

thanks thats great all i need to know
why to mobile phone companys put apps on that you dont want or need that you carnt remove, & are just takeing up space!
then we'd not have to go looking for ways of debranding them
