Hi, welcome to AV Forums.
The connections should be (NOTE: no need to spend more than £10 on HDMI or optical cables):

PS3 -> Optical cable -> Home cinema Digital Audio IN
PS3 -> HDMI cable -> TV HDMI 2
TV (Audio Out) -> Stereo phono cable -> Home cinema AUX IN 2
Home cinema -> HDMI cable -> TV HDMI 1

Then press the AUX button on the home cinema remote control to choose AUX 2 or D.IN, for Freeview and PS3 respectively.

In PS3 Settings > Sound Settings > Audio Output Settings, set
Connector Type: Digital Out (Optical)
Output Format: Make sure Dolby Digital 5.1 Ch. and DTS 5.1 Ch. are checked.
Video Settings > BD Audio Output Format (Optical Digital): Bitstream

You should also press the PL II - MODE button at the bottom left of the home cinema remote to set the surround mode for stereo Freeview broadcasts (Pro Logic would probably be best). You don't need it for the PS3 as the optical connection provides true surround anyway.
