I notice my Yamaha A1030 has 1x optical out.

Does that mean I can transfer all audio signals from the HDMI inputs via optical?

I have a astro mixamp and it would be ideal if the above was true :)

No, only S/PDIF (optical and digital coax) audio sources or audio accessed via the receiver's networking capabilities can be passed out via the optical output

You could utilise an ADC (Analogue to Digital Convertor) in association with the consoles analogue audio capabilities in order to convert the Wii's audio to digital if still keen on pursuing this?

    Here's such a device:

CYP AU-D4T Analogue To Digital Audio Converter w/Audio Delay - Audio Converters - AudioVisual Online - Home Cinema and Hifi Specialists

You can use the receiver's second zone analogue outputs to the convertor and any analogue source connected to the receiver can then be output to the convertor or you can make a connection directly from the Wii U's analogue audio outputs to the convertor and then to the Astro MIxamp.

Another option would be something like this:
    http://www.amazon.co.uk/Neet®-Converter-Extractor-Digital-Analogue/dp/B00H8T1DJ8/ref=sr_1_4?ie=UTF8&qid=1392416468&sr=8-4&keywords=hdmi optical
