Please bear with me as I'm not up to scratch with all the techie side of things. My mate has a PS5 with a HDMI 2.1 cable and his TV shows that it's supported for 120hz, however with the same lead in my 4k TV, it still only shows 60hz due to 2.0 transfer speed limitations. I've tried two different cables and have the same issue. The tv is a TX-65EX700B, is there something I need to do with the TV settings or am being ridiculously stupid here??

Images attached to show how mine differs from his.

I believe the EX700B is a 2017 model?! That being the case, it doesn't have the HDMI 2.1 chipset that would enable it to support 2160p120.

Essentially, you'll need a newer TV for that level of support.
