You would need a compatible CRT T.V. or plasma, projector. Most T.V's do not accept component/progressive to improve on RGB
Confused when you say sky.

What model of DVD recorder do you have? On almost any machine with PS any source you input will come out as progressive scan component output provided the unit is on. Obviously this requires a compatible TV/screen - and depending upon what screen you have will depend whether it's equal to/better than/worse than RGB output.

The quality of the sky would probably be better with RGB feed direct as the DMRE85 is not going to be that hot for converting to component.
The input that is best for DVD would depend on the screen and recorders qualtiy
The hitachi's RGB input on scart is reaonable but the RGB on 3 phono is better, the component is better still, but...
...The DMRE85 may output better RGB than it's component but this i don't know.
