If I use a power amp from the AV pre outs is the AV amp having any bearing on the sound quality (assuming it's not bi-amped). I am looking at replacing my AV amp but the audio via a Rotel power amp is fine. Will changing the AV have any effect on the power amp sound ?

Yes, the pre-amp (or processor) will have an effect on the sound.

So it's a case of if I replace the AV I won't know until I get it home what the resulting stereo via the Power amp will sound like.

And again, yes. Even in a "pure stereo direct mode", the pre-amp section will have a sonic signiture to the over all sound.
