I wonder if anyone can help !

A number of my 4k blu-ray films are shot in 2.35:1 aspect ratio.

I can't seem to find an option on my projector or blu-ray player that will allow me to change the aspect ratio to 16.9. Should there be one ?

I use to have a Lumagen video processor which allowed me to change the aspect ratio.

Panasonic players don't have aspect ratio controls so you have to rely on the display to do anything in that regard.
 
I do hope that you understand and acknowledge that the only way to make a ~2.35:1 AR film fully fit a 16:9 screen shape is to either distort it (stretch it vertically) or crop off the sides. Your choice, of course, but either of these represents a compromise to the image one way or another.
