When my tv comes Tuesday i got a sky q box to connect and a x box one s i bought an optical cable and a good HDMI cable as well if i plug the HDMI cable and optical cable in the sky q box would the tv then play the optical sound feed or would it by default play the HDMI sound? i then will use the lead that came with the xbox one s (hope its 4k compatible lead that came with it)

You wouldn't use both.
The HDMI lead from the Sky Q box is all you need to connect it to your Tv.
TV's don't have optical inputs, any optical ports on TV's are outputs and like the optical output from the Q box and your XBox are intended to be plugged in to an AV receiver, amp or soundbar.
