Why have they jumped so many letters in the Greek alphabet?

There are epsilon, zeta, eta, theta, iota, kappa, lambda, mu, nu and xi between Delta and Omicron.

I checked this yesterday - they have actually used everything up to Mu already, just that most of these variants, although of interests, never really came to much.

As for why they skipped Nu - sounds too much like New?
Xi - well there are plenty of theories going around about that one....
