ntl.. digital 5.1???

    is there any way of stripping the sound of ntl's signal as they dont supply a optical output. and after spending 1500 quid on tv and surrund system, i dont fancy watching tv with only 2 speakers.

    No, it's their box, they will charge you if you mod it, and never heard of anyone doing it, and in any case they don't send a 5.1 signal, only sky+ does this, though many other stb's have digital out it's only stereo, just more precise than analogue. The best achievable with TV is Pro logic 2 or DTS neo.6 if that's what pushes your buttons. Sorry. BTW Sky+ is fraught with DD5.1 issues, many times it's supposed to be sending it it doesn't happen. This little can of worms is in it's broadcasting infancy, and many problems need to be solved before it becomes really functional, and for NTL this is years away if ever, they'd need to start supplying and replacing boxes with digital out capable ones, and they haven't any cash, as you may have heard.
