    Does an AV receiver add any benefits to video or is it purely for sound

    You can use the receiver to switch video inputs along with the sound, but in most cases the video quality will not be improved. What it will also do on a fair few receivers is up convert the video from composite>S-Video>component so you only need a single connection to your screen.
