New house:- New setup.... but how ?

Hi all
I've just moved home and in TV terms from a Dish, satellite Humax :-
To a home which had Fibre to premises (incredible internet), in the shadow of Sandy Heath mast ( .. a meat skewer in the TV get great RF ), Distributed RF and data.
I have Panasonic TVs but plan for a LG 65 GX ('cos its nice)

So I'm in a good place BUT what do I actually want ?
Historically we recorded everything and used the Humax (and harmony remote) to watch our "regulars" including daily dose of ITV soaps (no judgement please).

Now I have a Apple TV and various subscriptions but am frustrated by the different channels behaving a little differently and, of course, ITV is also SD. Also one can't get away from Ads. ITV Hub+ is not supported.

So I'm tempted to use a meat skewer a a new Freeview Humax for daily watching and relegate Apple TV the on-line stuff and movies.

This however, seems a little like under using the available resources.

I have loked at Plex and PI and all kinds of mishmash but I really don't understand what I'm talking about.

ADVICE PLEASE ??
