This may be a daft question, but is the quality of live HD on Sky better than when viewed after it has been recorded onto the box? In other words, does saving an HD program result in compression on the hard-disk, and therefore a poorer picture than if watching live?

The sky+ box (both std and skyhd) record the satellite feed for the chosen channel so upon playback you are seeing exactly what you would have done had you been viewing live at the time of the recording.

The same is not true of 3rd party HDD recorders that take the video feed being output.
