Listening via wireless headphones to music/movies via AV Receiver

I'm getting Sony WH-1000XM3 headphones. They have Bluetooth V4.2 with SBC, AAC, aptX, aptX HD, LDAC.

My receiver is a Denon X4200W. It's Bluetooth is V2.1 with EDR (enhanced data rate). It also has a headphone jack - I assume just stereo?
Neither of my UHD/HD bluray players have Bluetooth or headphone jacks.
my TV has Bluetooth V3.0 and a headphone jack.

So to listen to music/videos I could listen from the Denon via bluetooth or via the headphone jack and a bluetooth dongle. The dongle could have better audio formats than the built in Bluetooth, but coming from the headphone jack would I actually get anything better than stereo?

OR............. what about a HDMI to bluetooth dongle? I've spare outputs on the Denon.

At the moment I'm thinking of this as a way of getting better sound from the AVR to the headphones by using an optical connection.
