A couple of rumours from someone on NeoGAF who overheard a Microsoft employee discussing upcoming Kinect features: -
1. MS have got object scanning working with Kinect now. Remember the old promo vid when it was still called Project Natal where the kid scans his skateboard and it appears in the game? That's the sort of thing that object scanning allows.
2. Avatar making software. You can scan yourself and then edit the scanned in image to create an avatar of yourself.
3. Interactive stories and learning software. An example of this is a kid being able to read a story, and as they read it, certain words they say trigger other actions, such as characters and other images appearing on the screen which they can also interact with.
