Well quite a while ago I got tired if near liquid sausages and see through bacon in the supermarkets (yes, in one packet I could see through one rasher to the next!) and looked around. Found a farm shop which was better but still not quite right - pork sausages with that added smoky flavour, damp bacon (a sign of added water). A neighbour two doors down mentioned a butcher 2-3 miles from me, three generations etc. Went there a couple of days ago and the smoked streaked isn't damp, the smoked flavour is subtle because no added stuff is thrown in. It will take me a month or two to try all the sausages the make. If you are in Bristol - Don Hayes, Staple hill.
