You need a 3.5mm jack to 2RCA cable at the minimum if you're prepared to use the headphone out. You might get better results through the Line Out on a dock (either Apple's, Sik or Sendstation).

If you are using the headphone out and you have a European iPod, I recommend the use of iMod to raise the volume.

I have done this (including the mod), it is great. The sound is absolutely fine for a party or background music you need never reach for a CD again! There is also plenty of volume. If you are serious about your music, by way of absolute sound quality, this probably won't quite do it for you.
