If the correct way of setting your sub volume is 6db below your main speaker volume then why do some people run huge amounts of bass that surely can't used??

Well, I guess some people just love bass. It's all a matter of preference, others find their rears to subtle and increase the volume. Though "technically" not correct it just depends how you like it.
I suggest you set up your system to the correct levels and then tweak it according to your liking.

Personally I prefer a good bass but,

When you overdo it, especially a sub will bounce to much. At this point it will overshadow the higher tones. Go for a tight and clear bass. Its the best
