high room(3.3m) false ceiling DIY

hi guys, i'm an expat kiwi over on this side of the world, and was wondering if you could give me a couple of tips on this topic. while not 100% audio related i was reliably told that you were the ones to ask.
we have just moved into an old house while insanely high ceilings (3.3m). the house is sectioned into 2 flats so theres people living above us and the noise level is very high. our apartment is very open plan and we are wanting to create a false ceiling dropping ours by aprox 200mm, with those "hook thingys" that hold up the new roof. also we thought to insulate with rockwool and to meet the fire code here in Norway we've gotta have 2 layers of plasterboard after. our problem is that we have pretty much got only two rooms in our apartment, one 68 meters square with a giant free standing chimmney in the middle and the other 22 sqm (bathroom was done before we moved in). does anyone have experience doing this, or know of a good website? i'd apreciate your help here.
