HELP! Advanced picture settings for Sony Bravia KDL-40

I have a Sony Bravia KDL-40S3000 tv and I am trying to calibrate the picture settings to get the best picture. However, for both of my HDMI inputs, I cannot access certain picture settings.

I have an Xbox 360 and a small PC connected through my HDMI ports and a regular DVD player connected through component cables. For the DVD player, I have the option of three picture settings (Vivid, Standard, Cinema) and I am also able to adjust these settings for Contrast, Brightness, Color, Hue, etc.

For the other two devices that are connected to HDMI, I only have two picture options (Video, Text) and I do not have access to many of the advanced options. I can adjust Contrast and Brightness, however I cannot adjust Color, Hue, Sharpness, Noise Reduction and others (these options are grayed out in the menu)

Any help would be greatly appreciated since I'd like to be able to adjust all the facets of picture settings to get the best picture.

If the options are greyed out, they are not MEANT to be accessible or adjustable by the user.

There is probably a hidden Service Menu; but if you do the wrong thing there, the TV might become completely unusable.
