headphone jack from RCA?

Hi all, I'm hoping someone can help me out.

I'm looking for an ipod dock that has quite a specific specification. I have found what I'm looking for, apart from it does not have a headphone jack, which is pretty important.

However, it does have a range of connectors, i.e.

Apple 30 pin Connector, Audio Jack 3.5mm, Audio (2 x RCA) Stereo Line Out, Component Video, Composite Video.

Is it possible I could use the RCA out or other connector and convert that to a headphone jack which is going to allow me to use my headphones with it to a decent standard, or is this simply not possible?

If so, what option would be best?

Looking at the manual I can't see any way to attach headphones directly to the iStation.
 
Why not just use the 3.5mm stereo jack?
