I have an ASUS P5GD1 it supports S-ATA. If i got a S-ATA II HD would it A- not plug in or work B-- Work but not at the highest speed?

It should just fall back to SATA-150. A few drives need a jumper set to be recognised by some controllers (Samsung Spinpoint is the only one I remember ATM) but its not hard to do. You won't really notice the speed difference.
