Yes every channel you can access via the STB can be upscaled and sent via HDMI or component or left as normal via the other analogue outputs.
If you so choose you can specify that SD channels remain SD using the AUTO setting in the picture resolution option and HD will be HD thus letting your display scale the SD channels.

If you have it set to auto then some TVs 'blip' when you move from a HD to a SB broadcast.

i.e. Screen goes black whilst the resolution change is processed I think.

I found very annoying and leave it set to 1080i - others prefer to watch SD as SD.

Persaonally it doesn't make a big difference when watching non HD material, though non HD stuff on the HD channels e.g. Soccer AM, Nip/Tuck do look better IMO - not much, but enough to warrant watching over the other channel.

Don't expect miracles though, even some of the HD stuff looks very mediocre IMHO.

It depends what screen resolution you choose in the menu.
1080i upscales SD to 1080i and leave HD as 1080i
720p upscales SD to 720p and downscales HD to 720p
Auto sends SD at 576p and HD at 1080i

All HD channels on SKY are broadcast at 1080i resolution.
