I believe that HDMI is a digital signal and the Ethernet cable will send that digital signal over an analog frequency then convert back to digital but id say that using it for just sky HD should be ok

they do not convert to analogue and back to digital, they are purely amplifiers tuned to 4 pair cable. HDMI is actually CAT2 cable. The signal remains digital until it gets decoded at the set or receiver.
