If you like Thai food, I'd suggest Tookta's Cafe in Spring Street. It's a very small place but the food is very good and the staff friendly.

English's for seafood in the Lanes. My recommendation for Thai is the Giggling Squid, also in the Lanes, very intimate and excellent food. Hard to find good traditional restaurants in Brighton, it's all about being alternate so lots of veggie and organic restaurants. Burger Brothers for a decent gourmet burger and Indian Summer for nice Indian. You've also got Jamie's Italian which I think is on Ship Street which is pretty good, although you might want to stay away from chains.
For a decent steak and more traditional food I heard the Coalshed was good, but never tried it myself. Certainly looks good from the outside and the menu is tempting if pricey.

I just remembered there being a nice Vietnamese restaurant next to Jamie's Italian called Pho Pho as well, again it's a chain but not many of them around and very reasonable prices for tasty food.

Pomegranate (just off St James Street as you enter Kemp Town) for modern take on Kurdish/Middle Eastern food.
Chilli Pickle for 'up market' Indian.

As a fish hater the menu scared me to say the least! Steak is the only non fish option! Very nice though, worth a try. ;)

English's is probably my favourite restaurant in the UK. The seafood is first class. I'm hungry now.
