A few years ago I had a Freesat box that had a built in http server which allowed me to view TV channels in the browser on my laptop and even change channels etc. It was simply a matter of connecting the box to my home router and then typing in the http address and bingo!

Don't have it any more but would like to know if anyone has come across anything like this and could possibly recommend a model / brand?

You would need a enigma 2 based box with DVB-S2 tuners.

Enigma 2 can sort of work in a browser, you can change channels, but when it comes to watching it downloads a M3U8 file which you put into VLC. Far easier to have Kodi on your laptop which has a addon built in for Enigma 2 and gives you full access to watch record epg the whole lot

Can you recommend a make and model? I've seen Zgemma hs7 ?

Amazon product ASIN B07YFFPKBN

It's also possible to use DVB Viewer with the Enigma 2 boxes.

Basically save the desired bouquet of channels as m3u8 file and load it into DVB Viewer via these instructions (use google translate). You can then watch them on PC desktop that way, I have it set to use only my favourite list of channels.

Thanks for the recommendation. Don't require anything too sophisticated. Single sat and single Freeview would be fine. Another concern was if these boxes come setup and ready to go or if you have to flash / install additional software yourself to get the basic functionality I'm after?

You can buy them with the firmwear already flashed (my favourite is openvix) but they are not plug and go you will need to do some reading.
