Just wondering here, but when for example using CloneDVD to copy a DVD the software then re-encode the content to fit into a single layer DVD (to the price of the quality). But this means at least one can ripp a 3 hours DVD movie and get into a single layer DVD. So if I record some 3 hours, let say using a Panasonic player, in XP-mode. I would only get in 1 hour XP recording on a single layer DVD. But, has the recorder an option that it will re-encode and record the entire 3 hours recording to whatever quality that it manage to figure out that works best?

Maybe be so that the Panasonic doesn't offer this; but are there units that does?

Yes it has. It's called Flexible Record - dial in a running time and it will workout the disc space left and the bitrate required so it fills the disc completely.
