Interested to know if the extra channel information can be read by existing DVD players (hence limiting upgrades to AV amp and more speakers), or will we have to buy new DVD machines as well?

No worries, all current DVD player are Dolby Digital Ex, DTS ES and DTS ES Discrete (true 6.1) compatible.
I heard some players with Ex/Es decoding will be out soon ("6.1 output") but of course to hear the new channel you will need an amp with matching inputs, but again compability to 5.1 should be given (decoding of that channel can be switched off I guess).
