Today I learned that the iPhone will divert to voicemail when Do Not Disturb is switched on. I always thought it just silences the ring and notifications etc but the phone will still ring from the callers POV.

With this being the case what’s the point? I can just put it in airplane mode for the same results. I can still surf the internet in airplane mode if I flick WiFi back on so can’t see any advantage of Do Not Disturb other than some of the minor customisations.

DND had the following advantages:
It’s rule based, so you can have exceptions (eg favourites will always cause the phone to ring)
It can be set to turn on/off automatically at times or places or when driving
You can turn it on for a specific period (eg next hour)
You can choose if calls are silenced when you are using the phone during the period that DND is active
It can auto reply to certain callers with a message of your choice

In iOS 15, further enhancements have been made. Incidentally, going to voicemail is a function of the network not the phone.
