If you read through the threads in here you'll find fans of both Yamaha & Denon. I can't really say which is better, some people prefer the sound of one over the other.

What you really need to do is listen to both & decide which you think is best.

I wouldn't advise buying both & using one as a processor & the other as an amp. If you can afford both you would be be better spending it on all a single more expensive product like the Denon 3806.

Yamaha RXV2600 (upscaling, upconversion) / Denon 4306 (upscaling, ethernet interface for media streaming) is a better choice

Not sure. I'm not too familiar with the Yamaha range & I thought the 1600 was more of a budget amp until I saw the price/specs just now. They could be similar quality.

If you are not in a hurry to buy now the 1700 & 2700 are coming soon.

Just don't buy one each of Denon & Yamaha amps unless you want to try them both & then sell one. It will be a waste to use the processor from one & the power amps from the other.
