If I take the s-vid from Sky and input it into the 3805, then upconvert it to the component out, I see my Panasonic 700 projector is reading a signal of 625i. Anyway I can make it 625p? Wont that be a better picture?

The 3805 can't deinterlace an interlaced signal (i.e convert to progressive scan). You'll need a Video Processor to do that or an AV Amp with built in scaling. As it is, your Projector is then deinterlacing that signal anyway. :)
