Creating message rules in Exchange 2003

Morning all
Regrettably, the spam filtering on our Exchange server is now being swamped by unwanted mails (about the usual topics that I cannot mention here).

I want to be able to create a rule that contains specific keywords (as it's always these words that feature) so that it gets deleted (or at minimum moved to the generic spam folder on the station I use to monitor it).

Does anyone know how to do this? I tried making my own rule from one of my client PCs own Outlook 2003 but it didn't block the next mail that featured the specific word in its subject header - I think it has to be done at the Server to make it work.
