Connecting Sky Plus to Denon AVR-3310

I currently have sky plus which I feed to my series 6 Panasonic plasma via a RGB Scart to Component Video converter.

I am planning on getting a Denon AVR-3310 av receiver and a new tv with hdmi inputs. Will the av receiver accept a component video input and upscale it to an hdmi feed for the tv?

yes it will, or you could remove the converter altogether and just so go s-video from sky+ box to 3310 and it will convert that to hdmi as well, you may get a better picture that way depending on how good your converter is
 
I believe the Denon up does upconversion so you will be able to connect it to the amp via component and then output via the HDMI. You will also need an optical cable to connect the box to the amp so you can get full Dolby Digital 5.1 sound.
