If I'm going to connect a DVD player to an AMP and then up to a panel, I've assumed that I just need a component cable between DVD and amp and then likewise up to the panel.

...but what about audio?

The only other input I'm planning is SKY+, and here I'm going to go through a JS RGB-YUV convertor, and in this case, I will be using an optical cable to take audio from the Sky+ box to the amp separately from the component feed. This is why I'm wondering is component is purely "video", and hence why I'd need to also take audio separately from the DVD to the amp?

You should be able to take either a digital connection (optical or coaxial) from the DVD player to your amp or be able to use phono connections.
