Canon 350d AI Servo vs. One Shot

I have tried to shoot some point-to-point horseracing shots using AI Servo and ended up with a lot of blurred shots, probably through lack of understanding. I found though that all the shots taken on one-shot with fast shutter speeds are sharp enough. My question is what mode do most people use for their sports shots. I naturally assumed that I should be using AI Servo for a moving subject

I would be using AI Servo, with all focus points enabled.

One-shot is probably ok if the subject isn't moving too fast and your lens is fast at focussing, but AI Servo is easiest on the camera.

If your shots were sharper with a faster shutter speed, then I would guess that motion blur was the problem with your AI Servo shots, rather than a focus issue. But that is just a guess.

FWIW I usually leave mine in AI Focus mode, unless I know I'll be needing AI Servo.
