Camera Capture - Hardware + Driver Suggestions?

I'd really like to get into AI-type stuff, but the place to start is simple input recognition. I'd like to start by trying to capture live frames from a simple camera, so that I can process the images.

Can anyone recommend a camera with a suitable driver that is designed to provide programmer access to its input (in other words, has suitable documentation for accessing the data - just having a USB driver, for example, is pointless since it gives no clue as to how to access the input manually).

I'm not looking to do simple video capture with a pre-built program (such as MoveMaker), and I'd prefer not to use DirectX unless I have to - I'm looking to be able to write code to manually capture a frame from the driver. It's all part of the experience!

I need this for a [Windows] PC, and it needs to work under Windows 7 64-bit.

Any suggestions?
