I have an old analogue Camcorder with a 'AV out' socket.

Will I be able to route this through a DVDR+HDD to allow the film to be edited on the HDD and transfered to DVD? Or will I be able to play it through the TV and record the images from there?

    cheers

You will be able to play the camcorder footage to the DVD/HHD recorder and record it then edit it on the HDD and dump it back to DVD. The DVD/HDD recorder will display the picture as it records to your TV.

Most have RGB in so would minimise loss, ideal if you have firewire though
