I currently have my finished basement which will have 5.1 surround set up for my movies and some music. My upstairs living room will just be dedicated for music. I have Def Tech 350 book shelf ( with sub) as well as BW 683 floor standing. Any opinion on which I should use for the home theatre set up and which to use for the straight music? Thank you in advance for any help/insight

The best cinema systems always use smaller speakers backed up by a subwoofer, so Id definitely say use the bookshelves/standmounts with sub for the cinema system.

683s for music, Def tech for HT use. I had 683s for a few years and they did certainly kick plenty of bass out but not enough for HT use really. The only way I would disagree with geckodan's comment is by saying floorstanders and sub would be my preference over standmounts and sub. Not just because that's how my system is set up, the main reason I have floorstanders is for stereo music.
